Opening a new business in the middle of a pandemic isn’t ideal, but that’s exactly what Blackhole Bakery owner Jason Provo did this spring. “Bakeries are already perfect grab-n-go businesses,” he explains. Alongside friend and fellow pastry chef Alyssa Bailey, Provo serves up made-from-scratch pastries, bagels, donuts, and other delicious treats at the new shop on 55th and Troost (5531 Troost Ave.). So far, cinnamon rolls have been the breakout star—“We sell almost twice as many cinnamon rolls as anything in the case,” he divulges—but croissants stuffed with filling after they’ve been cooked are also fan favorites. And Blackhole is introducing some Kansas Citians to palmiers, puff pastry dough folded up with butter, sugar and a touch of cinnamon. “I’ve made converts out of many,” Provo says.
