Not only is Jasper the model of efficiency, he’s also renowned for his world-famous lasagna. It’s an old family recipe, so consider yourself blessed to now have it in your possession. Now as Chef Jasper would likely say, “Let’s get cooking! This lasagna isn’t going to make itself.”
Jasper Mirabile’s Lasagna
- 1 lb Lasagna noodles
- 2 lbs. Ricotta
- 1/2 cup Romano grated
- Salt to taste Italian parsley
- 2 eggs
- 1 lb. Ground Italian sausage
- 2 cups Jasper’s Sunday Sauce
Heat oven to 350°. Brown sausage in large skillet on medium-high heat. Meanwhile, combine egg, ricotta, parsley, salt and Romano. Drain sausage; return to skillet. Stir in pasta sauce. Spread 1 cup sauce onto bottom of 13×9-inch baking dish sprayed with cooking spray; top with layers of 3 lasagna noodles, 1/3 of the ricotta mixture and 1 cup of the remaining sauce. Repeat layers twice. Top with remaining noodles, meat sauce and Ricotta /Romano cheese. Cover with foil sprayed with cooking spray. Bake 1 hour or until heated through, removing foil after 45 min. Let stand 15 min. before cutting to serve.
