The fact that Cinco de Mayo and Taco Tuesday falls on the same day is not lost on us. And other than a tart margarita (tartarita?), the only thing we enjoy more on this holy day is some mighty rich queso. If you haven’t tried the new South of Summit’s wildly decadent Mexican cheese dip, well, you need to get out more. We would serve it over ice cream if we could.
S.O.S Queso Dip
Ingredients:
2/3 cup whole milk
¼ pound Velveeta pepper jack, grated
¼ pound Land o’ Lakes White American cheese, grated
3 ounces cream cheese, cubed
Directions:
In the bottom of a double boiler, bring about 1 inch of water to a simmer. In the top of the double boiler, place the three cheeses with whole milk stirring every few minutes until melted and smooth.
Tomatillo Pico
Ingredients:
1 cup tomatilloes, small diced
¼ cup white onions, small diced
¼ cup cilantro, chopped
1 lime, juiced
Salt, to taste
Break out your fave tortilla chips, slather with queso and top with tomatillo pico. Your Cinco de Mayo just got infinitely better!
